Inevitably, this summer will be significantly different from previous summers in 2020. The reason for this is the restrictions put in place amid the COVID-19 global pandemic. As of the date of this post, may restrictions are easing and institutions are looking more likely to open for the majority the summer, however, we will still not be able to experience what we usually do during summer, for example, large sporting events, music festivals, events, and more. This is in not in any way to say that we will not be able to enjoy this summer. As we are currently allowed to leave the house, socialise with friends, and we can expect hot weather, there will definitely be things to allow us to have an incredible summer.
During the summer season, there are many things we can do to make the most of the warmer weather. This includes going to your local beach or park, indulging in ice cream, sunbathing, and many other things. Drinking frozen drinks and frozen cocktails is also a common trend during the summer. Due to the circumstances of this year and specific restrictions, it’s highly likely that cocktail bars and stands will not be as widely available as previous years, which is why we have provided for you with some classic and creative cocktails for you, friends, and family to enjoy in your gardens this summer.
Watermelon Prosecco Sorbet Slush
Nothing beats the refreshing taste of watermelon in the sun. This frozen cocktail is the perfect way to cool down with the great taste of watermelon, enhanced with the smooth taste of prosecco.
Ingredients
One watermelon
200 millilitres of prosecco
Three mint sprigs with extra to serve
Half a lemon, zested
50 grams of sugar
Instructions
Cut the Watermelon into even quarters and remove all of the pips using a teaspoon.
Once the pips have been removed, cut the flesh into approximately 3cm cubes and place in baking parchment-lined containers where the cubes fit snugly.
Cover the flesh with prosecco, cover, and place in the freezer for four hours.
Place the mint, lemon, and sugar into a pan with 50 millilitres of water, then bring to a gentle simmer for three to five minutes until the sugar dissolves and the mixture has a syrup-like texture.
Cover the mixture and leave to cool completely, then strain.
Place the frozen watermelon cubes into a food processor with the sugar syrup and blend well, stopping and pushing the mixture towards the blades with a spatula every few seconds until it is at a slushy consistency. Add a splash more of prosecco if needed to create a stronger tasting, smooth slush.
Spoon or pour into six glasses and garnish with watermelon wedges and mint sprigs.
Frozen Margarita
Now it’s time for a classic! The margarita is a frozen cocktail that is much loved across the globe. It’s highly unlikely that you’ll ever walk into a cocktail bar and not see a margarita on the menu.
Ingredients
50 millilitres of tequila
25 millilitres of triple sec
25 millilitres of lime juice (not cordial)
15 millilitres of sugar syrup
A large handful of ice
A single of lime to garnish
Instructions
Place all of the ingredients into a blender and blitz the mixture until it is smooth.
Pour the mixture in a margarita glass, garnish, and serve.
Frozen Strawberry Daiquiri
Another classic that is bound to be missed this summer, the strawberry daiquiri! One of the most refreshing and tantalising frozen cocktails available. Not only is it delicious, but also incredibly easy to make.
Ingredients
500 grams of hulled strawberries
200 grams of ice
100 millilitres of rum
Half a lime (juiced)
One strawberry (to garnish)
Two slices of lime (to garnish)
Two cocktail sticks
Instructions
Blend the 500 grams of hulled strawberries to puree, then push the puree through a sieve to remove all seeds.
Pour the sieved puree into the blender again and add the ice, rum, and lime juice.
Blend the mixture to a slush texture, then divide between two martini glasses.
Push the lime slices and strawberry halves on to the cocktail sticks, then place onto the edge of the glass.
Frozen Raspberry Sangria
A twist on the Spanish summer classic! Sangria is drunk and thoroughly enjoyed across the globe during summertime. The frozen raspberry sangria is an incredible summer twist on the classic summer drink.
Ingredients
Six strips of orange zest (pared with a vegetable peeler.
Six scoops of raspberry sorbet.
Raspberries, leave some to garnish.
One bottle of sparkling red wine or sparkling rose
Instructions
Add the orange zest to six individual champagne glasses.
Add the raspberry sorbet to each glass, raspberries, then top up the glass with sparkling red wine or rose.
Pimm’s Slush
Pimm’s is a traditional, fruity alcoholic beverage that is famously drunk in the summer in the United Kingdom. This recipe shows you a frozen twist on the much loved British drink.
Ingredients
200 millilitres of Pimm’s
Four large or eight small sliced strawberries
A quarter of a cucumber, sliced
500 millilitres of lemon sorbet
Soda water
Two mint sprigs
Instructions
Pour 50 millilitres of Pimm’s into four wine glasses.
Divide the strawberries and cucumber between the four glasses.
Place two scoops of lemon sorbet into each glass and top up the glasses with soda water.
Garnish each glass with mint and add colourful straws for decoration.
